Mediterranean pastry
Ingredients
1 eggplant diced (first leave the eggplant slices salted to remove liquids and wipe)
2 zucchini or one large medium-sized cubes
1 white onion, diced
1 small red pepper diced
2 tablespoons oil for stirring vegetables
1 low-fat goat yogurt
3 eggs
2 tablespoons whole flour of any kind
1 tablespoon onion soup powder
Or alternatively 3 tablespoons whole flour and add spices to taste
Preparation
Bake in a little olive oil (2 tablespoons) the onion, peppers, zucchini and eggplant
In a bowl mix the rest of the ingredients and mix with the vegetables
You can add cubes of goat cheese or cheese rings Goat 5% from above
Put in a greased, padded baking dish and bake for about half an hour until the brown and the mixture is separate from the sides and not shaking.
